We like to have a salad almost every night, but I often get stuck in a ‘salad rut.’ I make the same simple green salad with a few sliced cucumbers, tomatoes and a basic vinaigrette. Not a lot of creativity or variety!
Fresh herbs are a great addition to any salad!
Mangoes are in season right now in Southeast Asia. I went to the market and they are plentiful and cheap, so I was inspired to make a salad with mangoes as a core ingredient. The variations are endless, but I went with a combination of butter lettuce, mango, cucumber, sliced red onion and some fresh mint and cilantro. Adding fresh herbs and fruit is an easy way to make a bright tasting salad.
Soak raw onions in cold water to remove the ‘bite’
I’m not a big fan of raw onion since it has such a strong taste…and aftertaste! On the other hand, my entire family loves the taste of raw onions. A few years ago, I stumbled upon a helpful tip to remove the strong bite from a raw onion. Simply soak the slices in a bowl of cold water and a squirt of lemon for 10 minutes. You’ll find they retain their crisp texture and flavor, but the strong taste will be mellowed. The color and taste of the red onion is a great contrast to the mango in this salad!
Homemade vinaigrette is super easy to make
Making your own vinaigrette is very simple since it’s just a 3-1 ratio of oil to vinegar (or lemon or lime). Of course, there are a million ways to spice it up a bit. I always add a bit of garlic, Dijon mustard and salt. This takes less than 5 minutes! I love the taste of lime paired with tropical fruit, so I used olive oil, lime juice, Dijon mustard and just a small bit of honey. Fortunately, the combination worked out perfectly for my cucumber mango salad!
If you are short on time, you can use a bag of pre-washed lettuce, pre-sliced mango and any dressing of your choice. It’s hard to go wrong! You can also toss in feta or goat cheese, avocado, and pine nuts. Adding chicken or shrimp would make this cucumber mango salad a complete meal.
Cucumber mango salad goes well with just about anything!
While it’s easy to fall into a recipe rut, it’s simple to add just a few ingredients to change things up a bit. Last week, I paired this salad with my Thai-Style Pumpkin Soup to help round out dinner for the night.It’s also a perfect accompaniment to grilled chicken or seafood, or even a light pasta dish.

Cucumber, Mango Salad with Lime Vinaigrette
Crisp butter lettuce and sliced cucumber are paired with fresh herbs, sweet mango, red onion and a simple lime Dijon vinaigrette for a colorful summer salad.
- 2 heads butter lettuce about 12 ounces
- 2 Japanese cucumbers or 1 English cucumber
- 1 mango medium sized
- 1 red onion small
- 1/2 cup fresh herbs such as cilantro and mint
Lime Dijon Vinaigrette
- 2 tablespoon lime juice about 1 lime
- 1 tablespoon Dijon or whole grain mustard
- 1/2 cup olive oil
- 1 tablespoon honey
- 1/2 teaspoon salt
Wash and dry lettuce. Tear into bite-size pieces.
Slice red onion and place in bowl of cold water and a squirt of lemon for about 10 minutes (this is optional).
Slice cucumber and mango, set aside.
Wash and roughly chop fresh herbs such as cilantro and mint.
Whisk together all dressing ingredients and add desired amount to salad (you might have some left over).
Toss gently to combine.
